I spoke too soon....
I can indeed pick an alternate browser. However, the link handoff (when clicking on a link hotspot from Notes) is not correct.
(Tested using Camino v0.7 Build ID: 2003031208 and Notes 6.0.1)
Case 1) Camino is not running: Clicking on a URL hotspot in Notes launches Camino, then opens a window to the correct URL.
Case 2) Camino running w/ open browser window. Clicking on a Notes URL hotspot brings Camino to the fore, but the browser window does not change to the Notes-specified URL
Case 3) Camino running with no browser windows: Same result as Case 2
If IE is the specifed browser for Notes, no such problems occur.
